Peach Carrot Juice (with Watermelon and Pineapple)

A couple of months ago we bought a Vitamix blender, so I’ve been playing with lots of different recipes and combinations for juices and smoothies.  This one was my breakfast this morning.  Plus, remember how I showed you how I freeze watermelon the other day?  Here’s one of the ways I’ve been using it.


Add to the blender:
3/4 cup water
1/2 peach (pit out, peel on)
1 carrot, washed and peeled 
1/4 cup pineapple (fresh, canned or frozen)
1/2 cup watermelon cubes (fresh or frozen)
1 cup ice cubes


Put the lid on the blender and mix it up.  Ours actually has a “smoothie” setting on it, so I just push the button and let it run the cycle.  For the same effect, start the blender at a low speed and gradually increase it to high speed and let it blend for 1 1/2 to 2 minutes.  Letting the blender run for what seems like a long time lets all the ingredients really get broken up and smooth.

This one is pretty kid friendly too because the peach flavor is strong enough to cover up the carrot, if you’re worried about that 🙂
