When I had the chance to try out some Barilla Tortellini and sauce, I knew just what I wanted to make.      

  

It’s the time of year for shopping, baking, cleaning, Christmas concerts, dance recitals…If you’re in need of a quick meal to add to your menu this may be just the thing for ya.  Here is what I picked up at my local Safeway (which is only a 3 minute drive from my house–so convenient)  AND, there’s a promotion going on for $.75 off the purchase of ONE (1) package of Barilla Tortellini, so that’s awesome too!

Ingredient list:
 1 package Barilla Tortellini Cheese and Spinach or Three Cheese
1 jar Barilla sauce 
1 tsp garlic powder (mix into the sauce)
1 cup shredded Mozzarella cheese, divided
1 red pepper, roasted and chopped  (or use jarred roasted red pepper)
2 Tbs Parmesan cheese
  


Set oven to broil. Wash and cut red pepper into 4 pieces, cutting out any white center pieces.  Lay on a broiling pan and put into the oven for 10-15 minutes.  You’ll want lots of black charred spots.   


While broiling, put on water to boil. Cook tortellini in boiling water for 10 minutes, drain. 
  


When peppers are done place the pieces in a plastic sandwich bag to let them steam (carefully–they’re hot!) 
Change oven temp to 350.
In a large bowl, combine jar of sauce (with garlic powder added) cooked tortellini and 3/4 cups of the shredded Mozzarella. 
Peel skin from peppers and cut into small pieces.  Add to the pasta mixture.
  


Pour into a baking dish and top with remaining 1/4 cup Mozzarella and the Parmesan cheese.
Bake uncovered for 20 minutes and serve.
