After school snack time is always tricky at our house. My kids don’t get home until 4, so it’s been hours since they’ve eaten lunch, but we also have dinner on the early side. We eat between 5 and 5:30 almost every night. After my days activities of the gym, running errands, my online class, volunteering at the school, taking care of the house, and whatever else popped up during my day, I need something fast available.
Skinnygirl popcorn is a great option because all Skinnygirl products offer at least 20% fewer calories than competing products. The popcorn comes in interesting flavors and have no artificial colors or flavors.
On one of my trips to WalMart I picked up a couple of flavors and created new popcorn recipes that are great for after school snacking. One savory, and one sweeter (which does add some sugar…but way less than a standard caramel popcorn, so that’s a win for me!)
So, are you ready to see what I came up with?
Chili Lime Popcorn
1 bag popped Lime flavored Skinnygirl popcorn
1/2 tsp chili powder
1/4 tsp garlic powder
Cooking spray
Spray popcorn out on a baking sheet. Mix chili powder and garlic powder. Lightly spray popcorn with cooking spray and immediately sprinkle with chili/garlic mix. Toss on the baking sheet and transfer to a bowl. You end up with the tangy lime and tiny kick of chili powder, and it’s so good!
This next recipe is the sweet one, and believe me when I tell you it’s so yummy!!
Coconut Almond Popcorn
1 bag popped Skinnygirl Butter popcorn
2 tbs coconut
2 tbs slices almonds
3 tbs sugar
1 tbs corn syrup
1 tbs butter
1/8 tsp baking soda
Pour popcorn, coconut and almonds in a bowl large enough to allow stirring (and safe to microwave). Melt sugar, corn syrup and butter in another microwave safe bowl or Pyrex measuring cup by microwaving 30 seconds, then stir. Cook another 30 seconds in the microwave, add baking soda and stir again. Pour over popcorn. Stir to coat slightly. Microwave popcorn for another 30 seconds and do a final stirring. Allow to cool, then enjoy. A little sweet, a little crunchy, a lot delicious.
