I’ve never tried cooking with almond milk before, but with 50% more calcium than milk, it was sure worth a try. Especially for my kids who have all stopped drinking milk for some reason! Shouldn’t they start liking more foods, not less as they get older?


But hot summer days call for cool summer drinks. This version of an Orange Julius has healthy whole fruit and fiber boosted almond milk. 


I stopped by Safeway on my way home the other day and easily found several varieties of Silk. I picked up the Silk Almond Coconut Blend and Silk Almondmilk Protein + Fiber plus some oranges. Everything else I had on hand.

Whole Fruit Orange Julius with Almond Milk
1 whole orange with peel cut off
1/4 cup frozen blueberries
up to 1/4 cup powdered sugar
1/4 cup Silk Almond Milk Protein+Fiber
1/2 tsp vanilla
1/4-1/2 cup ice cubes


Add all ingredients to a blender and mix until smooth. Makes 2 cups. Serve immediately, or pour into popcicle molds and freeze. 


You could also leave out the blueberries for a more authentic Orange Julius taste, but of course the blueberries are great for adding antioxidants!
