Easy Dinner for School Nights

As summer winds down all across the United States, houses are full of freshly sharpened pencils, squeaky new shoes and evenings that are usually full of homework, sports and music practice, school events, and then getting ready for the next day. We know that family dinner is an important part of a family routine.

Having some options that are tasty and require very little preparation are great to have on hand. Plus the easy treat will be a crowd pleaser. And I get to share this sweepstakes with you!

Head to Safeway and pick up a STOUFFER’S® Family Size Lasagna, an orange or yellow bell pepper, ranch dip, vanilla ice cream, NESTLÉ® TOLL HOUSE® Refrigerated Cookie Dough, NESTLÉ® Fun Size BUTTERFINGER®. Visit the Safeway site to build your shopping list and get valuable coupons for Back-to-School favorites.

Bake the lasagna according to package instructions. While it’s cooking, cut the pepper into slices and keep in the fridge. Press two cookie dough squares into the bottom of a ramekin or disposable mini pie tin (one for each person). Unwrap Butterfingers (one for each person) and place in a zipper plastic bag. Break into pieces using a rolling pin and set aside.


When the lasagna comes out of the oven, serve with peppers and ranch on the side. I love picking a single veggie as a side dish because it’s even easier than making a whole salad. When everyone’s about done eating dinner, heat the oven to 375, with a cookie sheet in the oven getting hot too. When it’s preheated, place each ramekin or mini tin on the cookie sheet and bake for 11-12 minutes or until the edges are getting brown and the center is starting to set (it can still be soft in the middle).


Remove from oven and add a scoop of ice cream and top with crushed Butterfinger. Please note that THE DISHES WILL BE HOT! If you’re serving young children, you may want to let it cool off a little more before you let them eat it. Then enjoy your soft gooey cookie and crunchy peanut-buttery Butterfinger bits with your favorite ice cream flavor.
