Greek Salad Recipe

Some say that breakfast is the most important meal of the day, but lunch is the one I struggle with. When I had kids home all day I was busy fixing lunch for them and then cleaning up afterward, so sometimes I’d forget to eat.

Now they’re at school during the day, and I spend most of the day doing my own homework for the college classes I’m taking. If I’m not careful, I get to 3 in the afternoon and start to not feel great. Only then do I realize I haven’t eaten! But I’m trying to do better, and Tyson® Grilled & Ready chicken strips and Wish-Bone® Italian dressing are helping.

This Greek salad is the perfect lunch because it’s tasty, I can throw all the ingredients into a single bowl and dig right in.

The red pepper is what takes the longest, but it can be prepped ahead of time.

Here’s what you’ll need for the salad:

  • Tyson® Grilled & Ready chicken strips (frozen or refrigerated)
  • Wish-Bone® Italian dressing
  • Red pepper, roasted and diced
  • Cucumber, diced
  • Black olives, halved
  • Feta chese, crumbled
  • Romaine lettuce mix

 

To roast the pepper, wash, cut into quarters, and place on a cookie sheet. Broil in the oven for about 10 minutes, but check the progress. You want it to get black and bubbly on top. Remove from the oven and put into a small plastic zipper bag to steam for 5-10 minutes. Then the roasted skin should peel right off. Cut into pieces. (I used 1/2 the pepper for this salad, so the other half went in the fridge and I can use in a salad tomorrow!)

While the pepper is roasting, dice cucumber and slice olives in half. About a 1/4 cup each.
Cut chicken strips into cubes (defrost the frozen strips in the microwave for a few seconds according to package instructions.) They’re the perfect addition to the salad because they’re fully cooked, white meat chicken made with no preservatives.

Fill bowl with lettuce mix, top with pepper, cucumber, olives, and 1 TBS feta cheese. Drizzle 1-2 TBS Wish-Bone® Italian dressing to give your salad an extra zesty boost of flavor. And enjoy!!
