Holiday Funfetti® Mini Cookie Cups

This week has kind of been a crazy week around here. Extra activities for the kids, a day off in the middle of the week for Veteran’s Day (thank you veterans!), regular school and homework and music for the kids, and of course school for me. I’ve had a big graphic design project I’m working on this week plus I took a computer programming exam too.

It was definitely nice to take a little break in the kitchen and do some recipe creation with FunfettiCake Mix and M&M’s® . Baking for the holidays is so relaxing, and comes with so many fun memories too. Today’s recipe is a fun and easy one to add to your list of Christmas cookies.

There’s a crumb crust (almost like shortbread) that’s topped with frosting and M&M’s®. Aren’t these little treats so cute and festive?

Here’s how you can make some of your own:
1 package Holiday Cake Mix
4 TBS melted butter
Pillsbury™ Funfetti® Holiday Frosting
M&M’s® White Peppermint
M&M’s® Holiday Milk Chocolate

Combine the dry cake mix and melted butter until it turns into crumbs. Put a heaping TBS into each mini muffin tin and press down with the measuring spoon. Bake at 325 for 6 minutes. Remove from tins (a plastic knife worked really well for me to get them out without scratching my pan)  Let cool completely.

Put frosting in a piping bag, or a sandwich bag with a hole cut in the corner to pipe frosting on top. Then top with sprinkles and M&M’s® White Peppermint and M&M’s® Holiday Milk Chocolate.

It’s the perfect, easy holiday treat paired with a glass of milk!

So don’t you think these little cookie cups would be perfect for a holiday party, cookie exchange, or sitting on Santa’s plate on Christmas Eve?

What’s your favorite recipe to bake for the holidays?
